Week 2 of the Total Transformation Challenge - New Ideas for Your Diet
January is the month of broccoli and cauliflower – the vegetables that definitely deserve the adjective “super” – they contain a wealth of nutrients and protective substances. Today, we're suggesting three tasty dishes that you can incorporate into your new meal plan any way you wish.
Breakfast suggestion: eggs with broccoli and cauliflower
Ingredients for one person:
A quarter of a head of broccoli
A quarter of a head of cauliflower
2 eggs
1 teaspoon of olive oil
A pinch of salt and pepper
Preparation:
Steam the broccoli and the cauliflower for about 5 minutes. Whisk the egg whites and add salt and pepper. On medium heat, fry the egg whites with the broccoli and the cauliflower for about 2 minutes. In the end, add whisked egg yolks then remove from the heat.
Broccoli and potatoes au gratin for a rich lunch
Ingredients for 1 person:
1 large potato
Half of a head of broccoli
1 egg
1 tablespoon of sour cream
1 tablespoon of Parmesan
Pinch of salt and pepper
1 teaspoon of sweet red paprika
Preparation:
Half-cook the potatoes in salted water, then peel it and cut it in larger pieces. Add broccoli and gently stir. Place everything in a baking tray (on top of baking paper). Whisk the egg and stir in the sour cream and the seasoning. Pour the mixture over broccoli and potatoes and sprinkle with grated Parmesan. Bake in the oven at 190°C (gas mark 5) for about 30 minutes.
Meat&veg patties
Ingredients for 1 person:
Palm sized portion of minced beef
Half an onion
Half a head of broccoli
Half a head of cauliflower
A pinch of salt and pepper
A pinch of nutmeg
1 teaspoon of olive oil
Preparation:
Fry the meat and sliced onion on the oil, medium heat. Steam the broccoli and the cauliflower for about 5 minutes, until it softens. Put everything together, add seasoning and mash everything (roughly). Then form patties with your hands and bake them in the oven at 200°C (gas mark 6) for about 30 minutes. Serve with a bowl of fresh lettuce, seasoned with freshly squeezed lemon juice.
